RTH data?

The RTH data would simply be a GPS coordinate stored in the EEPROM of the flight controller at the point of launch - it wouldn't be being transmitted, merely used as a reference to direct the aircraft based on its current position gleaned from the onboard GPS receiver.

Surely the perpetrator would set RTH to the target, to ensure the attack was effective even if something went wrong?

Who knows - they could just set failsafe to switch to "waypoint mode" instead of "RTH" so that even if control was lost it would continue doing its thing while they went to the pub.
